A well-travelled and glorious couple who had gotten engaged a year earlier in Italy. Their dream was to recreate the rustic Italian landscape that they loved so well, and what better place to do it than outdoors at UBC Botanical Gardens, under the arbor?
They wanted a rustic and family-style dinner that allowed for leisurely dining, and they wanted it to be authentic. Gorgeous heirloom tomatoes were brought in from ‘Sapo Bravo’ and buffalo mozzarella was marinated with fennel seed, lemon zest, fresh basil and oregano. A duo of pastas were offered, followed by big platters of whole grilled fish, accompanied by warm summer vegetables. And then slow-roasted marinated striploin, with arugula & Parmigiano salad…as they say in Italy…molto bene!
