An EPIC wedding! A truly remarkable couple with an amazing vision, and with every meticulous detail thought out well in advance. They wanted a very intimate experience for their guests, and they wanted to keep all the surprises that were in store a secret. All the guests knew was the wedding date and the requested attire…the rest was to unfold over the afternoon and evening. Aside from the décor, the flowers, the music, the ghost chairs with custom decals, the custom walls and art installations…all the many moving parts…the food had to be stunning. Hors d’oeuvres consisted of Lamb & Mint Pesto Medallions, Lobster BLT on Brioche and Salmon Tartare Cones topped with gold leaf…to name a few. Dinner was a 5-course plated affair, with the bride and groom moving seats (another surprise!) for every course. Cauliflower Soup & Butter Poached Spot Prawns, Beef Carpaccio & Salad, Risotto & Grilled Scallop and Halibut & Spring Vegetables, followed by custom made individual Wedding Cakes. All with wine pairings. Then guests moved upstairs to the rooftop patio where Side One Band was ready to get everyone onto the dance floor. And dance they did! A late night snack of Mini Cheese Burgers with Belgian Frites & Aioli was served at midnight. And the frites had to be just so, which meant a double-fry in the outdoor kitchen on Hornby Street, just before serving!
