A SURPRISE WEDDING, for 450 guests…how do you keep that a secret? And under a tent at a private residence? But that’s what they wanted, and that’s what we all pulled off. Guests assumed they were coming for an Engagement Party, but the secret was revealed when the MC announced that Chantel wasn’t dressed quite properly…and then WOW! The bride and groom wanted to treat their guests to a mixture of classic Indian cuisine, as well as West Coast modern. Chai tea, but also lavender lemonade. Tray passed hors d’oeuvres were provided by 2 of Vancouver’s best food trucks – Roaming Dragon and Vij’s Railway Express.

To start, family-style antipasti was served offering a selection of cheeses accompanied by honeycomb, fruit chutney, pear mostarda and Marcona almonds, and charcuterie accompanied by cornichons, olives, house made pickles and cauliflower pickle. For the main course, 4 grazing stations were set up around the room and offered classic Indian cuisine mixed in with modern Western. Crispy Brussels Sprouts and Roasted Sablefish was served alongside Butter Chicken, Lamb Curry and Vegetable Biryani. Also on the guest tables were plated accompaniments of mint chutney, mango achar, lime wedges, Serrano chilies, pickled red onions and citrus salt. And for dessert…mini donuts, maple crème brulee shots and fresh summer berries. And then the dancing began…
